Pedro Ximénez – i daglig tale PX – bruges over hele Spanien til at opnå søde vine med en forbløffende koncentration og sødme. Mest kendt er druen måske for at bidrage med sødme til ‘Cream Sherry’, men i praksis laves de bedste eksemplarer i bjergrige områder som her i Córdoba-provinsen, hvor druerne udsættes for større temperaturudsving og bevarer mere af sin naturlige frugtsyre. Producenten Toro Albalá har således som sin specialitet at arbejde med denne drue, og denne anmelderroste vin står med sin enormt mørke og koncentrerede farve og aroma som et pragteksempel for dens potentiale!

“It’s the 100-point Parker score for Toro Albalá’s Convento Selección 1946 that put Montilla-Moriles firmly back on the map. It’s still possible to find some bottles for three-figure sums. But this wine does the trick: treacke toffee, nutmeg, cinnamon and coconut notes.”

“The 1990 Don PX Gran Reserva has unusually high sugar, close to 400 grams (when this range is usually less than 360). Compared with the rest of wines, this feels like a very good value. These wines mature in old 550-liter American oak casks for decades, and the wines have great concentration. It felt unusually perfumed, a little spirity and with notes that made me think of Moscatel—notes of orange peel and flowers, and of course the raisin and dry dates and figs from these wines made with raisins. It’s sweet and dense like motor oil and leaves a combination of raisins and chocolate in the spicy and faintly warm finish. This was bottled in early 2019.”
