Exigence is the story of two villages of great character brought together for a grand journey in time. Exigence is a tale of patience, craft, and creation.
Although it always consists of Aÿ’s Pinot Noir and of Chouilly’s Chardonnay, the spirit of the assemblage is ever evolving and the idea as well as the execution is tied to the moment. Each wine, almost each sip will be unique, rare and inimitable.
– Creation & Ageing –
The last opus of Exigence finds a rich core in reserve wines from 1995 to 2013 Freshness in 2014. Upon the first release, the wine has been matured on
lees for 4 years.
– Tasting Note by Steven Spurrier –
“Very fine light yellow/white gold, brilliant clarity and discreetly persistent mousse; lovely combination of faintly citrusy Chardonnay and light red Pinot Noir fruits on the nose, which repays attention before going onto the palate, where the Pinot seems to dominate with breadth of fruit, the Chardonnay bringing the linear elements, both complimentary and harmonious and very plainly from Grand Cru vineyards; potential creaminess of texture, youthful and elegantly vigourous on the finish, a wine that can age for a decade in bottle.
